Cooking with roots, fire and craft.

Hearty stews, a holm oak charcoal grill and fresh market produce. Five taverns, one way of understanding food: the home-cooked way.

From the kitchens of Cantabria

Our way

The blacksmith forged iron. We forge the table.

Some crafts are not learnt: they are inherited. At La Taberna del Herrero we cook the way people have always cooked in Cantabrian homes — unhurried, with market produce and respect for the recipe.

From the stew pot that gets going in the morning to the rib steak that goes over the holm oak embers, every dish comes from the same belief: eating well needs no artifice, it needs honesty.

I ◇ Produce Market, season and named suppliers: La Jarradilla cheeses, Santoña anchovies, cured beef (cecina) from León, high mountain grass-fed meat.
II ◇ Fire A holm oak charcoal grill, the slow stew pot and an honest frying pan. The fire is in charge; we listen.
III ◇ Home Friendly service, free-range eggs from happy hens and desserts from the trolley. People come here to linger, not just to eat.
